Chow mein simply means stir-fried noodles, and the Cantonese version we cook keeps the noodles supple rather than dry. Sliced chicken goes in first, then onion, celery and bean sprouts, then the noodles, with just enough sauce to season everything and no more.
The whole dish is finished in a couple of minutes over the hottest burner in the kitchen. That speed is what keeps the vegetables crisp and gives the noodles their faint smoky edge — the flavour that separates restaurant chow mein from anything made at home in a frying pan.
